Abstract

Nutritional problems in Indonesia, particularly the high prevalence of stunting, remain a strategic challenge that significantly affects the quality of human resources in the future. Jember Regency is one of the priority areas for the national stunting reduction program, requiring effective, applicable, and community-based interventions. This community engagement program aims to optimize the role of the NutriLab Kitchen of Politeknik Negeri Jember as a community nutrition education center through the Teaching Factory (TEFA) approach. The target audiences include three strategic groups: the PKK Women’s Empowerment Team of Curahlele Village, campus canteen vendors, and women from the surrounding community. The program was implemented through participatory methods involving problem identification, interactive nutrition education, local-based cooking demonstrations, food safety training, and the development of practical educational media. Evaluation was conducted using pre-test and post-test instruments as well as direct observation of participants’ practices. The results showed a 23% increase in participants’ knowledge regarding balanced nutrition principles, local food utilization, and food safety practices. In addition, 72% of participants adopted the WHO Five Keys to Safer Food principles in their daily cooking activities. The program’s outputs included an HKI-registered local recipe booklet, scientific publications, and the establishment of the NutriLab Healthy Kitchen Community to ensure sustainability. This program demonstrates that the TEFA model is effective in improving nutrition literacy, healthy culinary skills, and strengthening community food security. This model has strong potential for replication in other regions to support the national stunting reduction program.
